Green Eggs & Ham

SERVES: 4

COOKING TIME: 10-20 MINS

INGREDIENTS

  • 1 x 200g can Plumrose Premium Deli Ham
  • 6 large (65g) eggs
  • 1/3 cup cream or milk
  • 1/2 cup grated mozzarella cheese
  • 1 tbsp pesto

    Toasted Ciabatta to serve

METHOD 1

Thickly slice Plumrose Premium Deli Ham into 8 and panfry until golden brown. Set aside and keep warm. Whisk together remaining ingredients, and in the same pan cook over a moderate heat. As the edges of the egg begins to look set, gently move into the middle, allowing the unset egg to the edges. Do not stir. Keep gently moving the eggs toward the centre, until almost all the curd is set and remove from heat. Plate the toasted ciabatta with ham slices and top with green eggs. Serve with cracked pepper.

METHOD 2

Dice Plumrose Premium Deli Ham and panfry in a (~ 20cm) non stick pan or dish with heat proof handle. Whisk together remaining ingredients except mozzarella, and pour over sizzling ham. Do not stir, but allow mixture to almost set, cooking over a low heat (the bottom will be browned and the top look moist but still unset ~ 10 minutes). Top with mozzarella and place pan under the pre heated grill until cheese is melted and browned.
Allow to cool slightly before slicing and serve warm with salad greens.

TIP: heavy based pans work best when cooking eggs as they allow even cooking and the eggs will not stick and burn
