Plumrose Premium Curried Sausages

INGREDIENTS

  • 1 tsp olive oil
  • 2 x 400g can Plumrose premium skinless hotdogs
  • 1 medium onion, sliced
  • 2 tbsp curry powder
  • 1 cup (250ml) beef stock
  • 1 x 400g can diced tomatoes
  • 1 cup (150g) frozen peas
  • ½ cup sultanas

METHOD

Pan fry

Heat oil in a large pan, and cook sausages for 3 minutes. Add onion and cook until soft. Add curry powder and cook for another minute, then add stock and tomatoes. Simmer uncovered for 5 minutes or until thickened slightly. Stir in peas and sultanas, cook a further 3 minutes. Serve with creamy mashed potatoes.
